Kerala Matta Rice, also known as Kerala red rice represent the red-coloured rice grains of the rice species Oryza longistaminata or Oryza punctata. It’s typically consumed and served as an accompaniment in Kerala in India and this is how it’s prepared.

Ingredients:

300g (1 1/3 cups) matta rice
3.5l (14 cups) water

Method:

Begin by thoroughly washing the rice. Place the rice in a fine-meshed sieve and place under running water. Use your hand to move the rice under the tap.

Once the water runs clear, tip the rice into a large bowl, cover with water and set aside to soak for 1 hour.

Drain the rice, tip into a fine-meshed sieve and wash again. Set aside to drain.

Bring 3.5l (14 cups) water to a boil in a large pot. Add the rice, stir to combine, then return to a simmer. Reduce the heat to medium-low, cover the pot and cook for about 20 minutes, or until the rice is tender.

When the rice is done, it should mash easily between thumb and forefinger, but it should not be mushy.

Drain the rice in a colander, return to the pot, cover with the lid and allow to steam for 10 minutes. This is the method I usually use for my rice, which gives nice separate grains. Technically it’s known as the ‘draining method’.
Serve immediately.
