This is an unusual though brilliant dish that answers the question of what do you do with those left-over chips (fries) after a night on the town. We’ve all been there, out on the town, had a bit too much to drink and bought some take-out to soak up the beer. You wake up the next morning and there’s a packet of chips (fries) eyeing you guiltily from the kitchen counter. Well, you no longer need to waste that food. Make this brilliant Kenyan curry instead.
Add chopped onions to pan set over medium heat with vegetable oil and fry the onions until lightly browned (5 minutes). Add chopped tomatoes and continue frying until the tomatoes have broken down into a sauce (about 6 minutes).
Stir in the ground cumin, paprika, black pepper and garam masala. Stir into the sauce and fry for 2 minutes then add the left-over chips (of course, you can use freshly-cooked chips/fries too).
Add the turmeric and chilli sauce (be generous with this, it adds flavour and spice) then gently stir in the chilli flakes. Sprinkle over the chopped coriander leaves and gently stir to coat the chips. Allow everything to warm through for 1 minute then serve.
