Ingredients:

6 tbsp unsalted butter
1 medium onion, finely chopped
3 large potatoes, peeled, boiled until soft and mashed
115g cottage cheese
60g Colby (or Cheddar) cheese, grated
salt and freshly-ground black pepper, to taste

Method:

Melt the butter in a small pan over medium heat then add the onion and fry gently, stirring occasionally until nicely golden brown (about 12 minutes). Take off the heat and set aside to cool slightly. Meanwhile, combine the mashed potatoes and cheese in a bowl. When the onion has cooled stir this and the melted butter in which it was fried into the potato mixture.

Season to taste with salt and freshly-ground black pepper then use as a filling for vareniki.
