Ingredients:
1 pre-cooked ham (about 4.5kg), with rind
150g brown sugar
3 tbsp Kahlua
120ml Kahlua coffee liqueur
2 tbsp mustard powder
whole cloves
Method:
Place the ham, rind side uppermost, on a rack in a roasting pan. Transfer to an oven pre-heated to 150°C and roast for 40 minutes per kg. During the final hour of cooking trim the rind, score the fat in a diamond pattern and stud with the cloves.
Pat the brown sugar into the top then sprinkle the 3 tbsp Kahlua over everything. Meanwhile, whisk together the 120ml Kahlua and mustard powder and pour this into the pan. Return to the oven and baste frequently with the pan juices. When done, remove from the oven, transfer the meat to a cutting board, cover loosely with foil and set aside to rest for 10 minutes before carving.
