Kachumbar (Spiced Indian Salad) is a modern British Indian Restaurant (BIR) recipe for a classic salad of diced vegetables with a lemon juice and spice dressing. The full recipe is presented here and I hope you enjoy this classic British version of: Spiced Indian Salad (Kachumbar).

Ingredients:
3 small Onions
3 small, firm, Tomatoes
1 big Cucumbers
1 Green Chilli
For sprinkling on top:
1 tsp salt (or add to taste)
1 tsp ground black pepper
1/4 tsp chilli powder
1/4 tsp ground coriander seeds
2 tbsp fresh Lemon Juice
1 tbsp Coriander (cilantro) Leaves, finely chopped
1 tbsp Mint Leaves, finely chopped
Method:
Use a vegetable chopper for even pieces and cube or dice the Onions, Tomatoes and Cucumbers into equal sized pieces. Mince the Green Chilli and mix with the chopped vegetables in a bowl.
Mix the salt, black pepper, chilli powder and ground coriander with the Lemon Juice and pour over the salad. Toss to combine, then garnish with the Coriander and Mint Leaves.
