Jus Goyave (Guava Juice Drink): A Senegalese recipe for a drink of guava pulp dissolved in water and sweetened with sugar that's typically served well chilled.
Ingredients:
1kg ripe guavas
water
sugar
Method:
Rinse the guavas well, remove the stems then cut the fruit into quarters.
Place the fruit in a food processor. Pulse to chop then add a little water and process until mashed (do not over-process, or you will not be able to remove the seeds).
Turn the pulp mixture into a fine-meshed sieve then press through with the back of a spoon so that the large pieces of skin, fibres and seeds are left behind.
Dilute the pulp mix with enough water to give you the consistency of a thick cream.
Sweeten to taste with sugar then transfer to the refrigerator and chill for at least 2 hours before serving.
