Jus de Madd (Madd Juice)

Madd is the Wolof name for the fruit of the Saba senegalensis, a seasonal wild fruit that grows in the forests of the Casamarance region and which is a very popular Senegalese treat. The fruit is egg-shaped, orange when its ripe, and the pulp inside is of a beautiful yellow colour, sweet and sour to the taste.

When in season, the fruit is sold in the markets by fruit vendors. To eat as is, the top is cut off and the flesh is lightly salted. The seeds are scooped out and the tangy flesh is sucked off them. The seeds are then discarded.

Ingredients:

20 madd fruit
sugar to taste
pineapple juice, to dilute (optional)

Method:

Cut the top off the fruit ten remove the seeds (the pulp will come out with them). Place the seeds and pulp in a pan with a little water, bring to a boil, reduce to a simmer, cover and cook for 20 minutes.

Take off the heat and sweeten to taste then allow to cool, stirring all the while.

When the fruit pulp is cool strain off the juice through a fine-meshed strainer covered with a double layer of muslin.

Chill the fruit juice and either serve neat or dilute with water or pineapple juice (as is most common in Senegal).

Serve very well chilled.

The madd juice is also commonly mixed with gin to make a cocktail or long drink.
