This is a classic Senegalese recipe for a drink made by dissolving the dry pulp of baobab fruit in sweetened milk.
Jus de Bouye (Baobab Fruit Drink): A Senegalese drink made from a blend of baobab fruit pulp, sugar and milk powder in a water base.
Ingredients:
1k baobab fruit (bouye) (monkey bread)
1kg sugar
8 sachets (80g) vanilla sugar
300g milk powder
4l water
Method:
Remove the baobab pulp from the fruit. Wash quickly (you have to be quick, or it will melt) then bring the water to a boil in a large pan and add the baobab pulp. Stir until the baobab fruit pulp has dissolved then stir to loosen the fibres and seeds.
Pour through a fine-meshed sieve to remove the fibres and seeds then turn into a large bowl and stir in the milk powder until dissolved. Add the vanilla sugar and enough of the remaining sugar to sweeten (the Senegalese like their drinks and desserts sweet, personally I only add 200g sugar).
Pour into bottles, stopper securely then chill in the refrigerator for at least 3 hours before serving.
