Jus de Bouye (Baobab Fruit Drink) is a traditional Mauritanian recipe for a classic drink made from baobab pulp in water that's finished with powdered milk, sweetened with sugar and chilled before serving. The dry pulp of baobab fruit (sometimes known as 'monkey bread') makes a tangy and refreshing drink. Children will suck the pulp off the hard seeds, like sweets, but it's just as easy to make a drink from the pulp.
Baobab pulp is sold either whole (with the seeds and fibres) or sifted to give the powdery pulp only. The whole fruit pulp is cheaper, but either can be made into this drink.
Ingredients:
300g baobab pulp
4l water
300g powdered milk
100g to 150g sugar
Method:
Bring the water to a boil then whisk in the baobab pulp until dissolved. Whisk in the milk powder then whisk in sugar to taste.
Take off the heat and allow to cool then strain through a fine-meshed sieve to remove any solids (discard these). Chill in the refrigerator before serving.
As an alternative, you can substitute powdered coconut milk instead of powdered milk.
For Ramadan this is sometimes flavoured with orange blossom water.
