Jugo de Tomatillo (Tomatillo Juice) a Classic Ecuadorian recipe for a drink of blanched and peeled tomatillos pulped with milk and water.
Ingredients:
12 ripe tomatillos
375ml milk
750ml water
sugar, to taste
Method:
Bring a pan of water to a boil. Cut a cross in the top of the tomatillos then lower into the boiling water. Blanch until the skin blisters then remove from the pan, allow to cool slightly and peel.
Combine the fruit in a blender with the milk and water. Process to liquidize then sweeten to taste with sugar. Pass through a fine-meshed sieve and chill in the refrigerator for at last 2 hours before serving.
