Jacket Potato with Salmon in Creamy Dill Sauce: An Irish recipe for a classic baked potato topped with a blend of smoked cod and broccoli in white sauce.

Ingredients:

4 large baked potatoes
30g butter
340g salmon fillet
4 tbsp dry white wine
1 tbsp fresh dill, finely chopped
6 tbsp crème frache
fresh dill, to garnish
lemon twists, to garnish

Method:

For perfect jacket potatoes you need potatoes of even size (about 275g [10 oz] each is ideal). Scrub the potatoes clean and prick all over with the tines of a fork. Brush with a little butter or oil then sit on a baking tray and transfer to an oven pre-heated to 200°C (400°F, Gas Mark 6) and bake for about 60 to 75 minutes, or until the potatoes are soft when gently squeezed.

Melt the butter in a frying pan, add the fish and fry for about 4 minutes per side. Remove from the pan and flake the flesh (discard any skin and bones). Add the wine to the pan and bring to a boil. Continue boiling the wine for 1 minute then stir in the dill and crème frache. Bring back to a boil and cook for 2 minutes, or until slightly thickened. Add the fish and allow to heat through.

When the potatoes are cooked, cut a cross in the top of each one. Using a clean tea towel, gently squeeze each potato to open out the cross. Spoon the salmon mixture over the top and serve garnished with sprigs of dill and lemon twists.
