Istarski krumpir (Istrian Potatoes) is a traditional Croatian recipe for a classic dish of potatoes and pancetta cooked in cream and milk that's finished with tomatoes and parmesan. Combine the potatoes, pancetta, tomatoes, garlic, parsley, Vegeta, pepper, olive oil, milk in a large bowl and toss to combine then transfer to a large baking dish. Cover with foil, transfer to the centre of your pre-heated oven and bake for 30 minutes.
Remove from the oven and sprinkle over the grated parmesan. Top with the sliced tomatoes, drizzle with the olive oil then return to the oven.
Continue baking, uncovered, for 40-50 minutes, or until cooked through and golden on top.
