Also known as a 'spotted dog', this is a version of Irish sodabread containing raisins and which is traditionally prepared in a cast iron skillet. Traditionally this was served as a dessert or for tea time, warm from the oven, spread with plenty of butter and accompanied by tea.
Ingredients:
65g sugar
1 tsp salt
1/2 tsp baking soda
420g plain flour
100g lard
100g raisins
2 eggs
180ml milk
Method:
Mix together the salt, sugar, flour and baking soda in a large bowl.
Dice the lard, add to the flour mix and rub in with your fingertips until the mixture resembles fine crumbs.
Beat together the eggs and milk in a jug. Add to the flour mix then use your hands to combine everything until the ingredients come together as a dough.
Turn onto a floured work surface and roll out until the dough just fits inside your skillet.
Grease the skillet, sit the dough inside then transfer to an oven pre-heated to 200°C.
Bake for 15 minutes, then reduce the oven temperature to 170°C and continue cooking for about 30 minutes more, or until the sodabread is golden brown on top and sounds hollow when rapped on the base.
