This recipe is for a classic Irish potato cake, with the twist, in this case, that they are prepared and cooked as triangular wedges.
Ingredients:
450g mashed potatoes
60g rindless bacon
20g butter
generous handful of fresh parsley, finely chopped
plain flour, for dusting
bacon fat or butter, for frying
salt and freshly-ground black pepper, to taste
Method:
Grill the bacon until crisp. Remove from the pan and drain on paper towels then crumble.
In a bowl, mix together the mashed potatoes, butter, parsley and seasonings then stir in the bacon pieces. Form the resultant mixture into flat, triangular, cakes and dust with a little flour.
Heat a little bacon fat or butter in a pan (you can use the fat from frying the bacon), add the potato wedges and fry until crisp and brown on both sides (about 10 minutes).
