Indonesian-style Spicy Cod: Classic Fusion recipe for a barbecue dish of cod steaks in an Indonesian-inspired marinade of lemongrass, onion, garlic, chilli, ginger, turmeric, coconut milk and lemon juice that are cooked over hot coals.
Ingredients:
4 cod steaks
1 lemon grass stalk
1 small red onion, chopped
3 garlic cloves, chopped
2 fresh red chillies, chopped
1 tsp fresh ginger, grated
1/4 tsp ground turmeric
2 tbsp butter, finely diced
8 tbsp coconut milk
2 tbsp lemon juice
salt and freshly-ground black pepper, to taste
red chillies, to garnish
Method:
Rinse the cod steaks, then pat dry with kitchen paper. Peel the dry outer layers from the lemongrass then thinly slice the core.
Combine the lemongrass, onion, garlic, chilli, ginger and turmeric in a food processor and blend until finely chopped. Season to taste with salt and black pepper. With the motor of the food processor still running, add the coconut milk and the lemon juice. Continue processing until well blended.
Arrange the fish steaks in a shallow, non-reactive dish. Pour over the coconut mixture and turn the fish until thoroughly and evenly coated.
Arrange the fish on an oiled barbecue rack set over hot coals and cook for about 8 minutes per side, or until the fish is cooked through.
Serve garnished with red chillies.
