Ingredients:
150g cornmeal
2 tbsp baking powder
1/2 tsp salt
1/4 tsp freshly-ground black pepper
1/8 tsp ground white pepper
60g onion, minced
1 egg, beaten
60ml milk (or buttermilk)
vegetable oil for frying
Method:
Combine the cornmeal with the baking powder, salt, black pepper and white pepper in a bowl. Stir-in the onion then form a well in the centre, add the egg and milk and whisk into the cornmeal mixture.
Add oil to a depth of about 3cm in a deep skillet or wok and heat to 180°C. Spoon in the hush puppy mixture and fry until golden brown all over, turning as necessary. Serve hot as an accompaniment.
