This is a classic, traditional, Greek recipe for a salad of boiled wild greens. As the greens are boiled, you can use more bitter, tougher and more aromatic greens than you normally would for this kind of dish.
Thoroughly wash the greens then place in a pan of boiling water and cook for about 8 minutes, or until well blanched. Drain then cop roughly and season with salt.
Place in a salad bowl and toss with a mix of the olive oil and vinegar. Serve warm.
