Prepare the pastry according to the recipe then roll out until large enough to line a 22cm diameter pie dish.
In the meantime, gently warm the honey in a saucepan then stir in the breadcrumbs and mix to coat in the honey. Take off the heat and stir in the lemon zest and lemon juice.
Carefully spread this mixture over the pastry then transfer to an oven pre-heated to 200°C and bake for about 30 minutes, or until the pastry is cooked and the filling is golden.
