Honey-glazed Barbecued Pork Chops: Classic British recipe for a barbecue dish of pork chops with a honey, sherry an orange juice glaze flavoured with ginger that are cooked on a barbecue (grill).

Ingredients:

4 lean pork chops
4 tbsp clear honey
1 tbsp dry sherry
4 tbsp orange juice
2 tbsp olive oil
3cm length of ginger, grated
salt and freshly-ground black pepper, to taste

Method:

Season the pork chops liberally with salt and black pepper then set aside to marinate.

For the glaze, combine the honey, sherry, orange juice, oil and ginger in a small pan. Heat gently, stirring continually, until all the ingredients are thoroughly blended.

Set the chops on an oiled barbecue rack over hot coals and cook for 5 minutes per side. After this time, brush the chops with the glaze and cook for about 4 minutes more per side, brushing frequently with more glaze during this time.

Transfer the chops to warmed serving plates and serve immediately.
