This is a traditional American pioneer recipe for a honey substitute made with sugar and flavoured with rosebay willowherb (fireweed) blossoms. It's also an excellent way of making use of wild flower petals.
Method
Mix together the sugar, alum and water. Alowly bring to a boil then reduce to a rolling boil and cook for 10 minutes. Add the flowers, take off the heat and allow to steep for 15 minutes then strain to remove the flowers.
Pour into clean, sterilized, jars. Secure tight-fitting lids and store until needed.
