Many recipes call for peppermint extract as an ingredient, but it is not particularly easy to buy. The truth is that this is very easy to make at home by simply soaking peppermint sprigs in an unflavoured alcohol base (vodka in this case).
Ingredients:
5 small sprigs of
peppermint (the tips are freshest, but the base leaves have more menthol content)
200ml vodka
Method:
Wash the peppermint sprigs then hang up to dry completely. Crush the leaves lightly by rubbing between your palms then pack the sprigs into a small screw-top jar. Top up with the vodka, ensuring that the peppermint sprigs are completely covered.
Shake the jar vigourously then set aside in a cool, dark, cupboard for up to 5 weeks to infuse. After the second week, taste the infusion every week. When it is strong enough for your liking, strain out the leaves then return the extract to the jar, seal securely and store in a cool, dark, cupboard until needed. Use in any recipe calling for 'peppermint extract'.
