Ingredients:
450g plain flour
2 eggs
90g butter, diced
milk
Method:
Combine the flour and butter in a bowl and combine with your fingertips until the mixture resembles fine crumbs. Add the eggs and beat into the mix. Now add just enough cold milk to bring the mixture together as a dough.
Turn the dough onto a lightly-floured pastry board and roll out lightly (about 1.5cm thick). Cut into any shapes desired (re-roll the scraps to make more).
Heat a griddle or cast-iron frying pan, add the slim cakes and fry until golden brown on both sides and cooked through. Serve hot with butter.
