Herby Fish Burgers

This is a classic example of the new Cornish cookery. Smoked and white fish are used in combination and it's this mixture that give these fish burgers their depth of flavour.

Ingredients:

225g (1/2 lb) smoked cod or haddock, skinned and diced
225g (1/2 lb) coley (coalfish) or whiting filet, skinned and diced
225g (1/2 lb) cooked mashed potatoes, cooled
2 spring onions, finely chopped
2 tsp finely-chopped fresh parsley
1 egg, beaten
flour, for dusting
30g (1 oz) grated Cornish hard cheese
115g breadcrumbs
sunflower oil

Method:

Mix together the fish, mashed potatoes, spring onions, parsley and egg in a bowl. Bring the ingredients together then divide into six or eight equal portions.

Dust your hands with flour then shape the mixture into balls then flatten into patties. In a bowl, mix together the grated cheese and the breadcrumbs. Use this mixture to coat the burgers.

When they are nicely coated, place under a medium grill (broiler) and cook for between 15 and 20 minutes, turning then half way through, and basting lightly with oil as you cook.

When they are nicely browned on the outside and cooked through, then they are done.

Serve in a bun with salad and tomato relish or salsa.
