Herb and Garlic Prawns: Classic British recipe for a barbecue dish of prawns (shrimp) in a parsley, lemon juice and oil marinade that are cooked on skewers on a barbecue.

Ingredients:

350g raw prawns, peeled but with tails left on
2 tbsp fresh parsley, chopped
4 tbsp lemon juice
2 tbsp olive oil
65g butter
2 garlic cloves, chopped
salt and freshly-ground black pepper, to taste

Method:

Place the prepared prawns in a shallow, non-reactive, dish along with the parsley and lemon juice. Season to taste with salt and black pepper then toss to combine and set aside to marinate in the herb mixture for 30 minutes.

Combine the oil, butter and garlic in a small pan. Heat gently until the butter melts. Stir to mix thoroughly and take off the heat.

Remove the prawns from their marinade with a slotted spoon then transfer to the pan with the garlic butter. Stir the prawns until well coated then thread onto skewers.

Place on a barbecue over hot coals and cook the kebabs for between 5 and 10 minutes, turning occasionally and basting with any of the left-over butter mix until the prawns turn pink and are cooked through.

Transfer the prawn kebabs to a serving plate and drizzle over any of the remaining garlic butter.

Serve immediately.
