Hearty Hogmanay Tart

Here is a modern Scottish recipe for a very moreish tart that makes a wonderful dessert for your Hogmanay (or New Year!) celebrations. In essence this is a variant of a honey tart that's made with marmalade (the Dundee classic!) rather than honey.

Ingredients:

225g shortcrust pastry
4 tbsp Dundee marmalade
50g butter, softened
50g caster sugar
1 egg, lightly beaten
50g Madeira cake crumbs
1 tsp ground cinnamon
50g ground almonds
110g raisins
1 clementine orange, cut into thin slices (halve these slices)
crème fraîche, to serve
ground cinnamon, for dusting

Method:

Turn the pastry onto a lightly-floured work surface and roll out until large enough to cover the base and sides of a 20cm diameter loose-bottomed flan tin. Trim the pastry neatly to the size of the tin.

Lightly warm the marmalade to melt then spread evenly over the entire surface of the pastry.

Cream together the butter and sugar in a large bowl until light and fluffy. Add the egg along with the cake crumbs, cinnamon and ground almonds then mix throughly to combine.

Fold in the raisins then spoon the resultant mixture into the prepared flan tin.

Transfer to an oven pre-heated to 200°C and bake for between 20 and 25 minutes, or until the top of the filling turns golden brown.

Remove from the oven and layer over the clementine orange half-slices to decorate.

Serve warm, dusted with ground cinnamon and accompanied by crème fraîche.
