Harvest Drink is a traditional English recipe (from Cornwall) for a classic harvest-time pastry made from a flour and lard dough base that incorporates chopped apples in the mix before being baked. This traditional Cornish spiced drink, also knowns as spruce, was made in large quantities for farm workers at harvest time.
Ingredients:
500g caster sugar
4.5l water
juice of 1/2 lemon
peel of 1/2 lemon, finely chopped
2 tsp tartaric acid
1 tsp ground ginger
Method:
In a pan, combine the sugar and 750ml of the water. Bring to a simmer and cook until the sugar dissolves. Take off the heat and work in the chopped lemon peel, lemon juice, tartaric acid and ginger.
Set aside for 20 minutes then mix in the remaining water. Chill well before serving.
