This is a North Indian recipe for a starter of boneless chicken marinated in a vibrant green sauce of yoghurt, mint leaves, coriander leaves and spinach that’s barbecued and served with the remaining marinade. You can, of course, increase the amounts and serve this as a main meal with flatbreads and/or rice.

Ingredients:

650g (1 ½ lbs) boneless chicken, cut into 5cm (2in) pieces (I tend to use boneless thighs)
vegetable oil for basting

For the marinade:
Salt to taste
125g (½ cup) yoghurt
1 tbsp ginger paste
1 tbsp garlic paste
25g (1 cup, heaped) mint leaves
25g (1 cup, heaped) coriander leaves
50g (2 cups, heaped) spinach
2 tbsp garam masala
3 tbsp lemon juice

Method:

Combine the yoghurt, ginger paste, garlic paste and leaves in a blender or food processor. Process until smooth then mix in the garam masala and lemon juice. Place the chicken in a non-reactive bowl, pour over the marinade and stir to coat the chicken. Transfer to the refrigerator and marinade for between 5 and 6 hours.

An hour before you are due to cook remove the chicken and marinade from the refrigerator. When the hour is up thread the chicken pieces on skewers either under a grill on a baking tray basted with oil or on a barbecue over medium coals. Cook until the chicken, basting regularly with oil, until it turns nicely brown all over. In the meantime, heat any leftover marinade in a small pan.
Pile the chicken on a serving dish (either on or off the skewers) pour over the vibrant green sauce and serve immediately.
