Harina de Maiz (Dominican Cornmeal Porridge) is a traditional Dominican (from the Dominican Republic) recipe for a classic dish of marinated red snapper that's dredged in flour and fried to cook. Ingredients:
110g cornmeal, (harina de maíz)
2l milk (whole or skim) (or substitute coconut milk or half of each)
200g brown sugar
½ tsp salt
4 cinnamon sticks
½ tsp cloves (or ¼ tsp ground cloves)
¼ tsp freshly-grated nutmeg
Method:
Mix all the ingredients (except the nutmeg) in a pot, let it rest for 10 minutes.
After this time place the mixture over medium heat and cook, stirring constantly, until it just comes to a boil.
Immediately reduce heat to low. Cook and stir for another 4 minutes.
Take off the heat and divide between serving dishes. Sprinkle with nutmeg
This porridge can be served hot or at room temperature.
