Halvah is a traditional Jewish sweet (candy) made with a honey base thickened to a toffee and flavoured with sesame seed paste (tahini) and sesame seeds. Similar confections are made throughout the Eastern Mediterranean and the Near East.
Add the honey to a medium saucepan and bring to a boil then immediately take off the heat and blend in the sesame seed paste (or the ground sesame seeds) before beating in the milk powder and the vanilla extract.
Spread the resultant mixture into the base of a well-greased 22cm diameter springform cake tin or a large loaf tin. Allow to cool then cut into small squares and store in an air-tight box in the refrigerator. Eat as a high-energy snack or serve as a treat.
