Poné de Citrouille (Pumpkin Pone)

Poné de Citrouille (Pumpkin Pone) is a traditional Guyanese recipe for a classic dessert cake of a pumpkin, and coconut in a cornmeal, water and sugar batter with spices. Method:

Pre-heat your oven to 180°C. Grease and flour a loaf tin or springform cake tin and set aside.

Crack the coconut open, extract the flesh then grate it finely. Also finely grate the pumpkin flesh. Finely-grated pumpkin and coconut ensures a smooth texture to the pone.

Combine the grated coconut and pumpkin in a bowl then add the cornmeal, sugar, and margarine. Gradually add water, mixing until the mixture has a dropping consistency. Now stir in the cinnamon, nutmeg and vanilla extract. Mix well to combine

Pour the batter into the prepared cake tin then transfer to your pre-heated oven and bake for about 45-50 minutes until the cake is golden brown and cooked through.

Remove from the oven and set aside to cool completely before unmoulding.

Slice and serve.

Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for a decadent treat.
