Guyanese Green Seasoning

This is a traditional green seasoning from Guyana that uses the local wiri wiri or chocolate chillies. These are little rounded chillies that, despite their size, can deliver 100,000 to 350,000 scoville units of heat. They are a staple of Guyanese cooking and are used to make pepper sauce (often in combination with papaya) as well as being used in traditional green seasonings, like this one. Ingredients:

2 seasoning peppers (pimento peppers)
2-3 coffee peppers (wiri wiri)
5 garlic cloves
4-5 shado beni (culantro) leaves (substitute coriander if not available)
3 spring onions
5-6 thyme sprigs (broad-leaf thyme typically)
2 thin slices of ginger
1-2 tablespoon olive oil (optional)

Method:

Traditionally this was made in a mortar and you can still chop and pound the ingredients that way, if you desire. However, for the more modern way, see below:

Add all the ingredients to a food processor and season to taste with salt and pepper. Blend to a consistency that's just a little finer than that of a salsa verde.

If not using immediately, transfer to an air-tight jar and store in the refrigerator where it will keep for up to 2–3 weeks.
