Guinness Beer Bread

This is a modern Irish recipe; in essence its an Irish take on Northern European rye bread.

Ingredients:

4 tbsp warm water
2 packets (15g) active, dried, yeast
425ml Guinness (or other Irish stout)
4 tbsp lard, melted
4 tbsp black treacle (molasses)
1 tsp salt
1 tbsp fennel seeds
425g rye flour
300g (about) white flour

Method:

Place the water in a mug and pour over the yeast. Stir to combine, over with a cloth and set aside for about 10 minutes, or until frothy.

Combine the beer and lard in a pan and heat until lukewarm. Immediately take off the heat.

Pour the beer mixture into a large bowl and mix in the treacle, salt, fennel seeds and then the yeast mixture. Stir to combine then work in all the rye flour, before mixing in just enough of the white flour to bring the ingredients together as a dough.

Turn out onto a lightly-floured work surface and knead well for about 10 minutes, or until smooth and elastic.

Grease a bowl, form the dough into a ball then turn in the bowl to coat. Cover with clingfilm and set aside in a warm place to rise for about 60 minutes, or until doubled in volume.

At this point knock the dough back then re-cover and set aside to rise for 40 minutes more.

Divide the dough in two. Shape one half into a round and place in a greased earthenware casserole dish. Shape the other half into a long loaf and sit this on a baking tray dusted with flour.

Transfer both loaves to an oven pre-heated to 200°C and bake. The long loaf will be ready in about 35 minutes and the round loaf in about 60 minutes. Both loaves are done when nicely coloured and when they sound hollow when tapped on the base.

Turn onto a wire rack and allow to cool before slicing and serving.
