Method:

Add the potatoes and eggs to a pan of lightly-salted water. Bring to a boil and cook for about 20 minutes or until the potatoes are tender. Drain and refresh in a bowl of cold water.

Peel the potatoes and eggs. Heat oil in a pan and fry the eggs until they are a light golden brown on all sides. Drain the eggs.

Put 1 tbsp of oil in a pan over medium heat. Add the minced onions, garlic and chilli. Fry for 1 minute, then scatter over the curry powder. Fry again for 3 minutes, stirring often to prevent burning.

Add the potatoes, coriander leaves and eggs to the pan along with the water. Bring to a boil and cook for approximately 10 minutes.

Serve hot with rice and/or Guianese roti.
