Grovey Cake

Grovey Cake is a modern English recipe (originating in Cornwall) for a classic treat originally made at pig killing time of barley flour griddle cakes baked with groves, made from the caramelized fat left after rendering lard. Groves are the dry, brown, pieces of fat left over after rendering pig fat down as lard. This was a classic treat made at pig-killing time. Traditionally they were cooked on a griddle, but can be oven baked. They should always be served hot.

Ingredients:

500g (1 lb) barley flour
250g (1/2 lb) groves
salt, to take
water, to bind

Method:

Chop the groves (but not to finely) mix with the flour and salt then work in enough water to bring the mixture together as a dough (about the same consistency as scones).

Turn the dough onto a lightly-floured work surface. Roll out to about 1cm (1/2 in) thick if you are going to cook on a griddle and between 1.5 and 2cm (3/4 in) thick if you are going to oven bake.

Once rolled out cut into squares about 3cm (1 in) in size. Either place on a baking tray and bake in an oven pre-heated to 180ºC (360ºF) for about 25 minutes, or until golden brawn and serve immediately.

Alternatively, cook on a griddle pan for about 3 minutes per side, or until nicely coloured and cooked all the way through. Again, serve hot.
