Bring a pan of lightly-salted water to a boil, add the rice and cook for about 12-15 minutes, or utnil tender.
In the meantime, place a deep frying pan over medium heat. Add the butter and melt. When the butter is foaming, add the onion, garlic and ground elder rhizomes. Stir-fry for about 10 minutes.
Shred the ground elder leaves, add to the onion mixture and cook for 2-3 minutes more, until wilted then stir in the soy sauce.
Drain the rice and stir through the other ingredients in the pan. Season to taste with salt and black pepper, then serve.
