Gromperekniddelen (Potato Dumplings) is a traditional Luxembourger (from Luxembourg) recipe for a classic accompaniment of dumplings made from mashed potatoes and flour bound with eggs that are boiled and coated in breadcrumbs before serving. Ingredients:

300g cold, mashed, potatoes
2 eggs, beaten
35g plain flour
1/4 tsp baking powder
1/2 tsp sea salt
breadcrumbs cooked in butter, to garnish

Method:

Combine the ingredients in a bowl, mix thoroughly then turn onto a floured work surface. Pinch off pieces of the dough then roll into balls.

Bring a pan of salted water to a boil, drop in the potato dumplings, cover and cook for about 25 minutes, or until cooked through. Remove with a slotted spoon, drain then garnish with browned breadcrumbs, cooked in butter.
