Just as in Wales, oatmeal is a traditional part of the Scottish diet and it's often used as a coating for fish where it lends both flavour and texture. This is partly because it was a survival food, partly because oats will grow in cold and wet conditions where other grains fail. Here it's used with that most archetypical of Scottish fish, the salmon.
Ingredients:
4 salmon steaks
flour, seasoned to taste
medium oatmeal to coat
butter for coating, melted
Method:
Lightly flour the salmon steaks then dip in the melted butter to coat. Sprinkle the oatmeal over the top and pat into the fish.
Place on a buttered grill tray and grill slowly for about 10 minutes (depending on the size of the steaks), turning once.
