Method:

Place a saucepan over medium heat. Once hot add the olive oil and use to briefly stir-fry the garlic for about 60 seconds, or until aromatic. Add in the barbecue sauce, Dijon mustard, peanuts and hot sauce.

Bring to a simmer and cook for 10 minutes then take off the heat and set aside to cool.

Pre-heat your barbecue. When ready to cook add wood chips (allspice wood is traditional, but pecan, mesquite or apple are also good).

Brush the sauce all over the fish steaks then place them on the barbecue. Keep brushing the steaks with the sauce until they are done. The time will vary according to the heat of the fire, the thickness of the steaks, and their proximity to the fire. Try not to turn the steaks more than twice.
