This is a classic Maharashtran spice blend that's been converted into a ready-made spice paste. The image shows the goda masala spice powder, which is then turned into a paste.
Combine the coriander seeds, cumin seeds, cassia, cloves, cardamom, turmeric, asafoetida and cayenne pepper in a coffee grinder and process to a fine powder.
Heat the ghee in a heavy-based pan and when hot stir in the spice blend. Fry on low heat for 2 minutes then slowly stir in the water until you have a smooth paste. Continue frying the mixture for about 5 minutes, or until thick and oily.
Add the dried coconut and the sesame seeds and continue frying until the mixture begins to turn lumpy and starts to turn brown. Season with the salt and take off the heat.
Allow to cool then spoon the mixture into a sterilized screw-top jar. Seal tightly and store in the refrigerator until needed.
