Goat's Cheese Muffins: A British recipe for a classic savoury muffin with goat's cheese, olives and rosemary incorporated into the batter.
Ingredients:
275g plain flour
1 tsp baking powder
1 tsp salt
2 large eggs
250ml milk
75g mild, ripe, soft goat's cheese log, rind removed and crumbled
50g pitted green olives, chopped
2 tsp fresh rosemary, chopped
rosemary sprigs, to garnish
Method:
Sift together the flour, baking powder and salt into a bowl.
Beat together 1 egg with the milk in a separate bowl. Fold this mixture into the flour mix then add the crumbled cheese, olives and chopped rosemary.
Line the wells of a 12-hole muffin tin with cases (or for a more rustic muffing with squares of baking parchment). Spoon in the muffin batter then beat the remaining egg and use to glaze the top of the muffins. Garnish each one with a sprig of rosemary then transfer to an oven pre-heated to 200°C (Gas Mark 6).
Bake for about 20 minutes or until well risen and golden brown on top. Remove from the tins and set aside to rest for a few minutes.
