Gnamakoudji (Ginger and Fruit Juice Drink) is a traditional Ivorian (from Côte d'Ivoire) recipe for a classic drink made from a blend of ginger, orange juice and pineapple juice flavoured with vanilla sugar. This is a classic Ivorian version of the ginger drink that, in various forms, is made throughout West Africa. What distinguishes this version from others is the addition of orange juice, pineapple juice and vanilla sugar to the base ginger liquid.
Ingredients
1kg ginger
1l orange juice
1l pineapple juice
cayenne pepper
4 sachets (40g) vanilla sugar
powdered sugar, to taste
Method:
Peel the ginger, place in a blender and render to a puree (add water, as needed). Turn into a bowl, mix in 1l water then turn into a fine-meshed sieve and allow to drain into a large bowl.
Once the liquid has drained through, mix this with the orange juice and pineapple juice. Add a little cayenne pepper to taste then stir in the vanilla sugar. Continue stirring until the vanilla sugar has dissolved then work in powdered sugar to taste.
Chill in the refrigerator for at least 2 hours before serving.
