Glazed Canella Scones

Ingredients:

250g self-raising flour
30g butter
140ml sour cream
1 egg, beaten
2 tsp ground canella (white cinnamon)
pinch of salt

For the Glaze:
150g powdered sugar
1/2 tsp vanilla extract
1/2 tbsp ground canella (white cinnamon)
2 tbsp milk

Method:

Sift all the dry ingredients into a bowl and rub the butter into the flour mixture. Add the sour cream and then the beaten eggs and mix to form a soft, elastic, dough. Turn onto a floured surface and knead before rolling out to some 1.2cm thick. Prick over with a fork and cut into small (4cm diameter) rounds with a pastry cutter. Place on an oiled baking tray and bake in an oven pre-heated to 200°C (400°F, Gas Mark 6) for about 12 minutes.

For the glaze, sift together the sugar and canella into a bowl. Add the vanilla extract then work in the milk until you have a smooth and just spreadable paste. Spread this glaze over the warm scones.

Serve warm, cut in half and covered with jam.
