Ginger Nuts

These are my favourite biscuits of all and I bake them on a regular basis (my wife is truly addicted). Shop-bought ginger nuts are OK, but nothing really compares with the flavours of proper home-baked ginger nuts. Try these and be converted.

Ingredients:

350g self-raising flour
pinch of salt
200g caster sugar
1 tbsp ground ginger
1 tsp finely-grated fresh ginger
1 tsp bicarbonate of soda
125g butter
75g golden (corn) syrup
1 egg, beaten
1 tsp freshly-grated orange zest

Method:

Sift the flour, salt, sugar, ginger and bicarbonate of soda into a large mixing bowl. Add the butter, golden syrup and freshly-grated ginger to a saucepan over very low heat until the butter has melted. Stir to combine, allow to cool slightly then pour into the flour mix.

Stir to combine then add the egg and grated orange zest. Bring the mixture into a dough then, using your hands, shape this into roughly 30 even-sized balls.

Place the pastry balls at lest 7cm apart on well-buttered baking trays then flatten them slightly with your fingers so they stay in place. Place in an oven pre-heated to 160°C (320°F/Gas Mark 3) and bake for about 20 minutes, or until very lightly coloured.

Allow to cool and harden for a few minutes then transfer the biscuits to a wire rack to cool completely. These are the ideal accompaniment to a cup of black tea.
