This was a classic Winter dish in the Luxembourg countryside in the Arlon region.

Ingredients:

8 potatoes, peeled and quartered
200g bacon lardons
100ml hot coffee
200ml sour cream or yoghurt

Method:

Bring a pan of lightly-salted water to a boil, add the potatoes and cook for about 30 minutes, or until tender. Drain the potatoes then return to the pan. Continue cooking, stirring constantly until the potatoes break down into a mash, but be careful they do not burn.

In the meantime, fry the bacon in a pan until crisp. Turn the potatoes into a large dish and sprinkle the bacon on top. De-glaze the pan used to fry the bacon with the coffee and pour this over the potatoes.

Serve accompanied by the sour cream or yoghurt. To serve, set the bowl of potatoes in the centre of the table. Take a spoonful of the potato mix, dip in the sour cream and eat.
