Rub each piece of chicken with salt and place the pieces in a casserole dish with 240ml water. Cover and simmer gently.
After about 15 minutes add the potatoes and a little oil, if necessary as well as the onion. Cook for a minute then add the spices, the ginger and the garlic.
Simmer for an additional 30 minutes then serve with rice and/or vegetables.
