This is a classic Mauritanian dessert of an orange-flavoured semolina cake served chilled and drizzled with honey.

Ingredients:

120g fine semolina flour
500ml whole milk
4 eggs
120g sugar
1 unwaxed orange (or lemon)
pinch of salt
honey, to drizzle

Method:

Finely grate the zest from the orange and set aside. Squeeze the juice from the orange.

Pour the milk into a pan and bring just to a boil. Take off the heat then pour over the semolina in a heat-proof bowl, stirring constantly until smooth.

Scrape the mixture back into the pan and put back on the heat and cook gently, stirring constantly, until the mixture thickens.

Take off the heat and stir in the sugar, orange zest and orange juice along with a pinch of salt. Add the eggs, one at a time, beating thoroughly to combine. Add a little honey to taste.

Turn the resultant batter into a 20cm diameter springform cake tin lined with parchment paper. Transfer to an oven pre-heated to 180°C and bake for 35 minutes, or until the top is golden brown and the cake is cooked through.

Remove from the oven and set aside to cool completely before turning out of the tin.

Transfer to a the refrigerator and chill for at least 3 hours before serving.

To serve, slice into wedges, drizzle over a little honey and bring to the table.
