Garlic Potatoes: An Irish recipe for an accompaniment of potatoes baked in a coating of oil, garlic and herbs.
Ingredients:
500g medium-sized waxy potatoes
4 tbsp olive oil
4 garlic cloves, unpeeled
a few sprigs of fresh thyme
a few sprigs of fresh rosemary
crystal rock salt, for sprinkling
chopped herbs, to garnish
paprika, to garnish
Method:
Scrub the potatoes clean then cut lengthways into quarters (do not peel). Place the potato pieces in a bowl of cold water to soak then rinse under cold, running, water and pat dry with paper towels.
Heat the oil in a flameproof casserole. When the oil is smoking hot, add the potatoes and the garlic. Reduce the heat and fry until the potatoes are browned on all sides. At this point stir in the herbs, cover the casserole and allow the potatoes to cook in their own steam for 15 minutes.
Remove the lid of the casserole and increase the heat to crisp the potatoes. Turn the potatoes into a warm serving dish and scatter with plenty of salt, more chopped herbs and a dusting of paprika.
