Gari Biscuits is a traditional Ghanaian recipe for a classic biscuit or cookie made from a base of fermented and dried cassava (garri or gari) with white flour, eggs, sugar, butter and milk that are dropped onto a baking tray and oven baked. Add the gari to a bowl and sprinkle 120ml of water over the top. Combine with the water, making certain that you break any lumps that form apart with a fork. Meanwhile, cut the butter into the flour in a separate bowl until the mixture resembles fine breadcrumbs. Add the baking powder, sugar, salt and gari to the flour mixture and combine well. Form a well then mix the eggs and milk together and pour into the flour mixture.
Slowly combine the ingredients together to form a batter. Drop the batter a tablespoon at a time onto a well-greased baking tray. Place in an oven pre-heated to 180°C (160°C/350°/Gas Mark 4) and bake for about 20 minutes, or until the tops are brown.
