Garoobey is one of the staple dishes of Djibouti. It is a porridge prepared by soaking oats in milk, and is flavoured with cumin or other spices. I was very interested to see that oat porridge was prepared in Djibouti as a breakfast dish.

Ingredients:

300ml rolled oats
600ml fresh milk (or milk powder reconstituted in warm water)
1/2 tsp salt
1/2 tsp ground cumin
1 1tsp ground cinnamon, to garnish (optional)

Method:

Combine the milk, salt and cardamom in a pan over medium heat.

When the milk is nearly boiling, slowly sprinkle in the rolled oats with one hand, while stirring round and round with a wooden spoon or stick with the other hand.

Bring to a simmer and cook for 20 minutes, or until the porridge is thick and the oatmeal is tender.

Divide between two serving bowls, garnish with the ground cinnamon and serve.
