Fulani Boullie is a traditional Central African Republic recipe for classic porridge of rice cooked in a peanut butter sauce thickened with rice or millet flour and flavoured with lemon juice. Ingredients:
250ml peanut butter
600ml boiling water
400g rice
300g rice or millet flour
120ml lemon juice
Method:
Mix the peanut butter with the boiling water until it forms a smooth paste. Add the rice and peanut butter mix into a pan and bring to a boil. Reduce to a simmer and cook, covered, for 25 minutes until the rice is cooked.
Stir-in the rice or millet flour until you reach the desired consistency and flavour with lemon juice. You can also add sugar and milk, if desired.
